Ingredients
-
1 1/2 cups all-purpose flour
-
1/2 teaspoon baking powder
-
/2 teaspoon salt
-
1/2 cup unsalted butter, softened
-
1/2 cup coconut sugar
-
1 large egg
-
1 cup sunflower seeds, toasted
-
1/2 cup sesame seeds, toasted
Directions
Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper.
In a bowl, combine the all-purpose flour, baking powder, and salt. Stir to combine and set aside.
In a separate bowl, cream together the softened butter and sugar until smooth and fluffy.
Beat in the egg to the butter and sugar mixture until well incorporated.
Gradually add in the dry ingredients, stirring just until combined.
Fold in the toasted sunflower seeds and sesame seeds, making sure they are evenly distributed throughout the dough.
Using a tablespoon or a cookie scoop, drop dough onto the prepared baking sheet. Leave about 2 inches of space between each cookie to allow for spreading.
Bake for 10-12 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
